Lots of people have used the web to publish their favourite recipes and there is so much out here it can be hard to know where to start. This page will take you to a selection from some of the sites we've visited. Apart from Peking Duck and Duck à l'Orange we don't, perhaps, eat duck very much in this country. A lot of peple think it can be too fatty. But the key to cooking duck is to cook it fast, in the oven, on a high heat. This will bring out the fat which you can use to roast potatoes (delicious).

There are lots of sites with duck recipes but there's a good one here where you will find, as one example, Duck Salad which we bet is a new one for you.

There are so many things you can do with pork. It makes a testy roast on its own but you can use it for stir fry, have spare ribs on your barbeque or cook it to have cold later. If you are cooking a roast and some of the family fight over the crackling make sure there is plenty for everyone by rubbing salt into the joint before you roast it. Lamb is so convenient. You can cook it as a roast on Sunday while you read the papers or play with the kids or you can quickly grill some lamb chops perhaps with a sprig of rosemary. But, just like pork, it is one of the versatile meats. We knew that before we put this page together but we were still surprised when we found this page which has loads of lamb recipes to make your mouth water.

We can so easily get into the habit of thinking that turkey is just for Christmas. We forget, not only that you don't have to eat this meat on the 25th, but also that it it is a cheap choice for the family throughout the year. Both these links will give you plenty of ideas. If any meat were to be a traditional Purbeck meat it would probably be venison. Yet it is not a common dish by any means. Many people will want some general guidance on how to prepare and cook it and they will find such guidance here.
